Chocolate Brownies

When ever you need a little something, these delicious Chocolate Brownies will hit the mark every time.

I remember a few years ago when I was working in London, I used to take in cakes and treats for my colleagues as I could experiment with my recipes, without having to eat them all myself.

There was a big meeting and the boss just happened to be in the building and yes you got it I had taken a selection of cakes in, word had got around and Bob decided to join the meeting!

Of course there was a selection of my cakes on the table for all to try…..

The out and out winner was the Chocolate Brownies, they are soft and fudgy in the middle, rich and chocolaty…. they really are delicious.

Everyone enjoyed the Chocolate Brownies and Bob asked for the recipe.

I obliged and emailed Bob the recipe, he had a couple of twin boys at home and he knew they would really enjoy the Chocolate Brownies.

The weekend after the meeting, I was at home and I received a text message from Bob, to say he had made the Chocolate Brownies and the house was full of that delicious rich chocolate smell, BUT did they really have to wait the 60 minutes before eating them….. The answer is YES, you need to wait, and I can assure you it really is well worth it.

  1. Heat the oven to 160c . Butter and line a 8” x 11" baking tin.
  2. Break the chocolate into pieces, and put in a microwave dish, chop the butter into small pieces and add to the chocolate, put in the microwave for a few minutes, this will depend on the power of your microwave. Keep checking and mixing as the chocolate may burn, when it looks like most of the chocolate is melted, take out and mix well and leave to cool, the heat should melt the remaining.
  3. In another bowl, mix the eggs until light and fluffy, gradually add the brown sugar and mix well, until well incorporated.
  4. Mix the chocolate mixture to the eggs and sugar, then sift in the flour and baking powder.
  5. pour the mixture into the prepared baking tin. Place the tin in the middle of the oven, bake for 50 minutes. Check the middle of the cake with a thin knife or skewer, it should still be a bit sticky in the middle, if very wet, cook for a further 10 minutes.
  6. Remove the tin from the oven and leave for a minimum of 1 hr before cutting, this will allow it to settle. I like to take a thin slice from the edges just to make it neat, but if you prefer you can leave and just cut the cake into squares.
